Egg Substitutions
Need to substitute eggs in a recipe? In general, you can substitute one (1) large egg with one of the following options in most baked and raw recipes:
- ½ cup pureed banana (or mashed banana);
- 1 “flax egg” (1 tablespoon of ground flaxseed with 3 tablespoons of water);
- ¼ cup applesauce (unsweetened);
- ¼ cup pureed peaches;
- ¼ cup pureed prunes;
- 3 tablespoons (T) of peanut butter (or nut butter of your choice); or
- 1/4 cup vegetable oil (e.g., coconut or avocado oil)
